Origin: Sumatra, Peru and Colombia

Delicately rich, crisply sweet-toned. Fresh-cut fir, dark chocolate, a hint of baking spice in aroma and cup and balance, lightly syrupy mouthfeel. Chocolate persists in a rich, mildly dry finish.

The roast process has a huge impact on the depth, complexity and richness that is developed by a given coffee varietal coffee.  To extract more subtle flavors in our origins and blends, Republica Coffee Roasters developed new and innovative techniques based on roasting and cupping observations over a number of years. A very rigorous roasting methodology stemming from this research was developed and implemented. The goal was to maximize the quality  of the artisan coffee that are roasted daily.  Finally nishing was developed to manage product turnover. Though  many of our production details are leading edge and strictly proprietary, the main focus of our work is on rapid product turnover and custom profiling.

Nestled between two mountains, El Chimborazo and Las Mercedes, lies Finca Las Mercedes about 10 miles from the city of Jinotega. The Catuai variety that they grow is subjected to a rigorous quality control system which ensures that only the best beans are harvested. The farmers also value traceability - harvesting coffee by lots and classifying them by their quality. All of this attention to detail delivers a high quality coffee, year after year.

Cupping Notes

This is a full-bodied yet clean coffee with only light acidity and flavor reminiscent of trail mix made of peanuts, cherries, and chocolate. Medium roast.

Started in the Farmers Market in West Vancouver Nancy Bendtsen wanted our Mocha Java medium roast which we tested for 5 years now and it had amazing reviews :)

This is a spicy, intensely chocolaty blend with hints of sweet chocolate, blueberries and wild honey in a big, bold body for a medium roast. Due to the heavy percentage of naturally processed coffee in this blend, it packs a level of sweetness and fruitiness not present in many other blends.
Our coffee shop sells Mocha Java, very few contain the real thing: Ethiopia Mocha. This rare bean has been grown and dry-processed the same way for hundreds of years - and it makes up a full 40 percent of our Mocha Java. To perfectly balance and elicit the legendary Mocha qualities, we blend it with Java, Mexico, PNG and Ethiopia Harrar.

comprises three Geisha blends that celebrate our farms: Jaramillo, Cañas Verdes and El Velo. Each of these presentations are and outstanding combination of high altitude Geisha microlots from their respective farms. This collection showcases each farm’s unique story, shaped by the interaction of the elements in them, but are all unmistakably Esmeralda Geishas for their brightness, sweetness and loral attributes.

Elevation: 1600 to 1900 masl

Since 2004, Hacienda La Esmeralda Panama has gone on to win a great number of major coffee industry awards and to set several online coffee auction price records. This makes it the hardest coffee to find. No one will have it no matter the price. Fortunatly we have a friend  in Panama that could source it for us. It took 6 years to get one sack.

Panama is a rising star in the specialty coffee world. In the Boquete in particular, farmers are taking Arabica coffee cultivation to new levels and recent auctions of small, specialty lots have garnered record, if not silly, prices. Nonetheless, some of the coffee is excellent. Gesha, a varietal that stems from Ethiopia, has been grown here with good success, yet other cultivars noted above, can produce superb results.

This is my favorite blend designed to endure the rigors of dark roasting, and produce excellent tastes, attractive flavors, and great body. Body is so important to a darker roast. Extended roasts incinerate body, and a thin cup of burned water IS NOT what French Roast coffee is about! You do not want to fully burn up all the sugars, you want some degree of sweet, overlayed on the tones of the woody structure of the bean itself. You want something voluminous, and something sharp that stings you a bit down the center of the tongue. Well, at least if you do want these things, then we share common ground, and you might like my blend. Please note that we made changes to improve the blend. I have changed the percentages and added a new coffee that became available that really enhances the chocolatiness in the Vienna stage, and the body in the darker French stage.
