This year’s Christmas blend has been my favourite Republic blend. So happy you are offering it again after it selling out and due to the popular request. Last year’s Christmas blend was excellent as well but I like this blend even more. The Perfect Storm blend is also a consistent flavour favourite for me. REPUBLICA COFFEE ROASTERS…my favourite roaster of all (and I have tried a lot locally and from other provinces).

First time purchase of the Sidamo and it was also on sale. Used it to make an Americano style cup with my Aeropress and it did not disappoint. A wonderful bright and fruity cup…so delicious.

Ordered 2 lbs. of the Roasted Sidamo for my Aeropress recently. The Sidamo made for an excellent Americano style cup with a bright fruity flavour to it. So I ordered 10 lbs. green beans of this excellent coffee for my home roaster. So yummy.

I prepare this in an Aeropress at home but have had it as espresso in the cafe, its better as espresso. I do like the bitterness on this one.

Coffee guru James Hoffmann on YouTube mentioned he tends not to drink dark roast as medium roasts are more complex and he enjoys that more than the bitter and burnt flavours. Interesting I though, I’m going to look into that. So I got a bag of Bendtsen beans in. Well he was right, certainly this blend, its got a lot going on and I find it moreish compared to dark roasts. I certainly get the fruity and sweet out of it made in an Aeropress. And the all important mouth feel is substantial. This is my current favourite.

I quite like this, it does have a hint of chocolate, a good round mild bitterness and a robust body (I use Aeropress) I like it. Works for me black and with cream. I will be trying it on icesream as I think it will work well. Happily I don’t get the licorice in it, I hate licorice but had to try my favourite roasters seasonal offering. I only gave four stars because Perfect Storm is THE best IMHO.

This is just a niggle. I was disappointed that for a Xmas blend it had no xmassy spice hints that other Christmas coffees often have, like cloves or orange, that sort of thing. They don’t say it has but still!!!! Also my bag didn’t have the Santa hat on it which I was really looking forward to and would have made it awesome to give as a gift, the hat would have made it seasonally more fun, the ‘cherry on top’ or the ‘red nose on the reindeer’. 🙂

This was my gateway drug/coffee to the Republica oeuvre. And is still my absolute favourite Dark of all time. Not that I have tried everything, I’m super satisfied with this. Hard for me to describe but I was hooked on my first sip of simple drip in a cafe, I make it so much better in an Aeropress. Good body and just bitter enough.
