From the Sierra Madre region of Chiapas in Southern Mexico. This co-op was started in 1992 and the 850 members/farmers are in the district of Chiapas. The environmental diversity of mountains and valleys provides soil full of calcium and limestone. Expect fruit tones with slight chocolate aroma, light and bright acidity, smooth almost creamy body, slight sweet hints of chocolate flavour, long and smooth aftertaste.
