In terms of taste, most current versions of Timor are typical for small-holder wet-processed coffees from the islands of the Malay Archipelago: Low-key. However, the very best and cleanest-tasting Timors can be extraordinary: full, round, smooth, sweet, and deliciously cocoa-toned. These coffees, already promising, may continue to improve as the first decade of the millennium unfolds.
The Hybrido de Timor coffee plant varietal has also been crossed with the Caturra varietal (Coffea arabic var. caturra) to produce the Catimor varietal (Coffea arabica var. catimor), which is also resistant to coffee leaf rust. Export of Timor coffee is limited and it’s generally difficult to find wholesale distributors that carry green coffee beans.
